Five Soups We're Loving Right Now

There’s something about this time of year that makes us want to slow down. The windows are cracked just enough to let in that crisp autumn air, a candle is burning somewhere in the house, and there’s a big pot of something wonderful simmering on the stove.

At Archie's House, we believe the best meals are the ones that make home feel a little more like home.

And while we'll always have a soft spot for a classic tomato bisque or chicken noodle soup, this season we're reaching for something a little different.

Think pillowy gnocchi tucked into a creamy sausage broth, roasted pears blended with earthy parsnips, and caramelized onions meeting the unexpected richness of white miso.

These five soups are cozy, a little unexpected, and absolutely worth making.

01. Creamy Sausage & Gnocchi Soup with Rosemary and Whipped Ricotta

The comfort favorite

35 minutes · Serves 6

If a Sunday afternoon could be served in a bowl, this would be it.

Tender potato gnocchi, savory Italian sausage, and a silky parmesan broth come together with rosemary, garlic, and a generous spoonful of whipped ricotta. It's rich without being overly heavy, and the little pockets of gnocchi make every bite feel like a treat.

What you'll need

  • 1 lb mild or hot Italian sausage

  • 1 small yellow onion, diced

  • 4 cloves garlic, minced

  • 1 tsp fresh rosemary, finely chopped

  • ½ tsp crushed red pepper flakes

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 16 oz potato gnocchi

  • 2 cups baby spinach

  • ½ cup freshly grated parmesan

  • ½ cup whole-milk ricotta

  • 1 tsp lemon zest

  • Salt and freshly cracked black pepper

How to make it

  1. Brown the sausage in a large Dutch oven over medium heat, breaking it into bite-sized pieces. Add the onion and cook until softened, about 5 minutes.

  2. Stir in garlic, rosemary, and red pepper flakes. Cook for another minute until fragrant.

  3. Pour in chicken broth and bring to a gentle simmer. Add gnocchi and cook according to the package, usually 3–5 minutes.

  4. Reduce the heat to low. Stir in cream, spinach, and parmesan until the spinach wilts and the soup becomes silky. Season to taste.

  5. Whisk ricotta with lemon zest and a pinch of salt. Spoon over each bowl just before serving.

The Archie’s House touch: Finish with rosemary-infused olive oil and serve with toasted sourdough. That little spoonful of lemony ricotta makes all the difference.

02. Roasted Pear & Parsnip Soup with Brown Butter and Crispy Sage

The unexpected one

50 minutes · Serves 4–6

Pears in soup? Trust us on this one.

Roasting ripe pears alongside earthy parsnips creates a beautifully balanced soup that's subtly sweet, savory, and surprisingly sophisticated. A drizzle of nutty brown butter and crispy sage brings everything together.

What you'll need

  • 4 medium parsnips, peeled and chopped

  • 2 ripe Bosc pears, cored and quartered

  • 1 shallot, peeled and halved

  • 2 tbsp olive oil

  • 3 cups vegetable broth, plus more as needed

  • ½ cup heavy cream

  • 3 tbsp unsalted butter

  • 8–10 fresh sage leaves

  • ¼ cup toasted hazelnuts, chopped

  • 1 tsp apple cider vinegar

  • Salt and black pepper

How to make it

  1. Preheat the oven to 425°F. Toss parsnips, pears, and shallot with olive oil, salt, and pepper. Roast on a sheet pan for 25–30 minutes until tender and caramelized.

  2. Transfer to a pot with vegetable broth. Simmer for 5 minutes, then blend until completely smooth.

  3. Stir in cream and apple cider vinegar. Adjust the consistency with additional broth and season to taste.

  4. Melt butter in a small skillet over medium heat. Add sage leaves and cook until crisp, removing them as the butter turns golden and smells nutty.

  5. Ladle soup into bowls. Drizzle with brown butter and finish with crispy sage and toasted hazelnuts.

The Archie’s House touch: Serve in shallow stoneware bowls with a few thin slices of fresh pear for an elegant dinner-party presentation.

03. Caramelized Onion & White Miso Soup with Gruyère Toasts

French classic, reimagined

65 minutes · Serves 4

We love French onion soup. We also love a little twist on tradition.

White miso adds a savory depth that makes slow-cooked onions taste even richer. Finished with sourdough and bubbling Gruyère, it's familiar enough to be comforting but interesting enough to feel brand new.

What you'll need

  • 4 large yellow onions, thinly sliced

  • 3 tbsp unsalted butter

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • ½ cup dry white wine

  • 5 cups low-sodium beef or vegetable broth

  • 2 tbsp white miso paste

  • 1 tsp fresh thyme leaves

  • 1 tsp sherry vinegar

  • 4 thick slices sourdough bread

  • 1½ cups shredded Gruyère

  • Black pepper

How to make it

  1. Heat butter and olive oil in a Dutch oven over medium-low heat. Add onions and cook slowly for 35–45 minutes, stirring regularly, until deeply golden.

  2. Add garlic and thyme. Pour in white wine, scraping up the browned bits from the bottom of the pot.

  3. Add broth and simmer for 10 minutes. Whisk miso with a little warm broth in a separate bowl, then stir it back into the soup along with sherry vinegar. Taste before adding any salt.

  4. Toast the sourdough. Ladle soup into oven-safe bowls, top with bread and Gruyère, and broil briefly until golden and bubbling.

The Archie’s House touch: Rub the toasted sourdough with a cut garlic clove before adding the cheese. It's a small detail that gives the whole dish a little extra character.

04. Smoky Sweet Potato & Coconut Soup with Chili-Crisp Chickpeas

Sweet, smoky & a little spicy

45 minutes · Serves 4–6

This isn't your average sweet potato soup.

Smoky paprika, fresh ginger, creamy coconut milk, and a bright squeeze of lime give this soup layers of flavor. But the real star? Crispy chickpeas tossed with chili crisp for a little heat and a lot of crunch.

What you'll need

  • 2 large sweet potatoes, peeled and cubed

  • 1 yellow onion, chopped

  • 3 cloves garlic, minced

  • 1 tbsp freshly grated ginger

  • 1½ tsp smoked paprika

  • 1 tbsp olive oil

  • 3 cups vegetable broth

  • 1 can (13.5 oz) full-fat coconut milk

  • 1 lime, juiced

  • 1 can (15 oz) chickpeas, drained, rinsed, and dried

  • 1 tbsp chili crisp, plus more to taste

  • Fresh cilantro and salt

How to make it

  1. Preheat oven to 425°F. Toss chickpeas with a little olive oil and salt. Roast for 25–30 minutes until crisp.

  2. Meanwhile, sauté onion in olive oil in a large pot until softened. Add garlic, ginger, and smoked paprika.

  3. Add sweet potatoes and vegetable broth. Simmer for 20 minutes or until the potatoes are fork-tender.

  4. Blend until smooth, then stir in coconut milk and lime juice. Season to taste and gently warm through.

  5. Toss roasted chickpeas with chili crisp just before serving. Spoon over soup with cilantro and an extra squeeze of lime.

The Archie’s House touch: Add a swirl of coconut milk and serve with warm naan. The contrast between the silky soup and crunchy chickpeas is what makes this one special.

05. Wild Mushroom & Chestnut Soup with Thyme and Sherry Cream

Cozy meets elegant

50 minutes · Serves 4–6

This is the kind of soup that makes an ordinary Tuesday feel like dinner at a little countryside inn.

Earthy mushrooms, sweet roasted chestnuts, and fresh thyme simmer together before being blended into a velvety, deeply savory soup. A touch of dry sherry and cream gives it a beautiful finish.

What you'll need

  • 1 lb mixed mushrooms (cremini, shiitake, and oyster), chopped

  • 1 cup cooked, peeled chestnuts, roughly chopped

  • 1 shallot, finely diced

  • 3 cloves garlic, minced

  • 2 tbsp unsalted butter

  • 1 tbsp olive oil

  • ¼ cup dry sherry

  • 4 cups vegetable or chicken broth

  • 3 sprigs fresh thyme

  • ½ cup heavy cream

  • 1 tsp lemon juice

  • Salt and black pepper

How to make it

  1. Heat butter and olive oil in a Dutch oven. Sauté mushrooms in batches until deeply browned, reserving a few for garnish.

  2. Add shallot and garlic, cooking until fragrant. Deglaze with dry sherry and let it reduce by half.

  3. Add chestnuts, broth, and thyme. Simmer for 20 minutes.

  4. Remove thyme stems and blend until smooth. Stir in cream and lemon juice, then season to taste.

  5. Serve with reserved sautéed mushrooms, fresh thyme, and a small drizzle of cream.

The Archie’s House touch: Finish with a few drops of truffle oil if you have it, and serve alongside crusty bread with salted butter.

From Our Haus to Yours

Some of our favorite evenings don't involve big plans or elaborate meals. Just something delicious on the stove, a comfortable place to settle in, and the people (and four-legged friends) who make a house feel like home.

Whether you start with the creamy sausage and gnocchi or try something completely unexpected, we hope one of these recipes finds its way into your regular rotation this season.

Because sometimes, all you really need is a good bowl of soup.

Come in. Stay awhile.

With love, Archie's House 🐾
